Candied Ginger

Well here it is! My first attempt at making candied ginger using the recipe that was posted on Alicia's Picks on the Luvly in Lunenburg blog. It is delicious with a great kick of heat! However, when I stored it in an airtight container, as the recipe suggested, the lovely sugar coated ginger pieces, after a short time, were swimming in a syrupy pool. Not nice! So ..... I will research other recipes and continue to experiment. I read that some recipes put the ginger pieces on a drying rack after they are cooked. My new mission is to become the candied ginger guru because I love this stuff. So, friends, family and neighbors, guess what your getting in your Christmas sock this year!
